John P. Cable Grist Mill

The story

The working water-powered grist mill at the heart of the Cable Mill area — the community's economic hub, built around 1870.

You've parked and you're on foot now, in the Cable Mill area — the closest thing Cades Cove had to a town center. Take your time here; this is the richest cluster of buildings on the whole loop.

In front of you is the John P. Cable Grist Mill, and if the water's running, you may hear it before you see it — the rush of the millrace, the groan of the big overshot wheel turning. John Cable was one of the largest landowners in the cove, and around 1870 he built both a grist mill and a sawmill on this stream. Think about what that meant for a farm family. Before the mill, grinding your corn into meal was brutal hand labor. After it, you loaded your corn in a sack, brought it to Cable's, and the water did the work — the miller taking a portion of the meal, the 'toll,' as his pay.

Watch the mechanism. Water is channeled down the wooden flume to pour over the top of that wheel; the weight of the falling water turns it; the wheel drives a shaft; the shaft turns a heavy round millstone against a fixed one; and the corn poured between them comes out as meal. No engine, no electricity — just gravity, water, and stone, engineered by people with an eighth-grade education and a lifetime of practical genius.

This mill still runs for visitors in season, and the meal it grinds is real. It's the only working grist mill left in the park. Stand here a minute and let it turn.
